First graders from the Ellensburg Christian School visited Eberhart Orchards last month. Urban gave a tour for the six-year olds, which included picking apples and starting up a wind machine. Afterwards the children wrote:
Dear Mr. Eberhart,
We really had a good time at your orchard. Thank you for telling us all about your trees. It was fun to pick our own apples. God has given you lots of fruit. Your wind machine is really powerful. We learned many things from your talk. Thanks for meeting us on the road. You are very nice. Thank you for letting us come.

Andrew Jackson Downing was an influential American horticulturalist and prolific pre-Civil War author. This year is the 150th anniversary of his death in a tragic steamboat accident on the Hudson River. A Memorial to him, called the "Downing Urn," is located in the Smithsonian Institution's Enid A. Haupt Garden. Little more evidence of his life and work exists today. A.J. Downing's writings are out of print and hard to find.

Andrew Jackson...the name sounds familiar, you think, but Downing, you're not so sure. Andrew Jackson Downing often published under his initials, A.J. Downing, to lessen the likelihood of association with his famous predecessor. He published profusely. His writings included a study of American horticulture titled, "Fruit and Fruit Trees of America," also "The Architecture of Country Houses; including designs for cottages, farm-houses, and villas," "Hints to Persons About Building in the Country, and Hints to Young Architects," and "Rural Essays" which in a sub-title purports to cover horticulture, landscape gardening, rural architecture, trees, agriculture, fruit, etc., etc.

In 1846 A.J. Downing founded "The Horticulturalist" magazine and served as its editor until his death.

"Once it gets going, it's easier. The hard part is getting it started." Grandma Barbara's comment about her winter knitting project could apply to most things. Especially if it involves undertaking a task and the use of tools or technique not tried before. We're all familiar with the learning curve. Expect it. Whatever your winter projects might be; whether you're building, stitching, baking, knitting or creating anything at all for the first time, remember the maxim, "Practice makes perfect," and if that doesn't get you through the "as ye sew, so shall ye rip," blues, just tell yourself, "If at first I don't succeed...."

Clean out your refrigerator month!November, (in case you haven't heard) is National Clean Out Your Refrigerator Month. It's a sorry comment on the state of most kitchens if we need a national month of observance to remind us to tackle this kitchen chore! It seems that "Clean Out Your Refrigerator Day" was a commercial "holiday" designated by the Whirlpool company a few years ago, to increase awareness of food safety.

The day was set for a week before Thanksgiving. That did have a certain logic. Who knows? Leftovers from last year's Turkey Day Feast might still linger in the deep recesses of the fridge, pushed back behind that scraped out jar of peanut butter and, hmmm, looks like sauerkraut....Even those famous "Car Guys" could not resist poking fun at it. You can find a clean out your refrigerator day greeting card on cartalk.com! However, one day apparently wasn't time enough to get the procrastinators among us to throw out and scrub up, so we now have all of November as "National Clean Out Your Refrigerator Month."

Well, the cause is a good one even if national day or month designation is a tad absurd. All agree that most fridges could use a good cleaning before the holidays when they get their heaviest use. It's a good idea to clear out old food every two weeks and wash the inside of the refrigerator with soap and water. Doesn't sound like much to celebrate though, does it? Don't worry, we won't be sending cards!

Parkin & Harcake sounds like the name of a law partnership. The Brits know otherwise. These are regional types of gingerbread traditionally served on special nights in England during early November. Parkin is a sticky gingerbread made with oatmeal, served on November 5, during Bonfire Night, in remembrance of Guy Fawkes' foiled gunpowder plot against King James I of England. Harcake is a dense, dark gingerbread, made around Halloween time, in remembrance of the dead. Some believe that recipe, also called "Hearth Cake" or "Soul Cake," was made to be laid on the graves of departed loved ones, to nourish them in the afterlife. Household Hint - Wood oil or Block oil is handy for many jobs. It's good for more than just treating such items as wooden salad bowls, knife handles, and breadboards. Use it to clean and protect knives, kitchen scissors, garden clippers and pruners. When your favorite garden tools get gunky, soak them in block oil and wipe with steel wool. Blades get sparkly and the coating will help prevent rust.

Month of November Feature Recipe

Will Rogers, in the Illiterate Digest, got it right when he said, “I tell you folks, all politics is applesauce.” Here’s our Grandpa Boulton’s recipe for cooking up applesauce to serve with whatever brand of politics that’s dished up at your house this election time.

To make Applesauce - Grandpa's Style

Wash, core, peel and cut up in coarse pieces about 3 pounds of apples per quart. Cook apples until soft in a large kettle with enough water to prevent sticking. Add approximately 1/4 cup sugar per pound of apples or to taste. Sweeter varieties of apples will require less sugar. Bring applesauce to a boil, stirring constantly. Reduce heat and add spices such as cinnamon, allspice, cloves and nutmeg. Simmer for five minutes. Fill hot jars leaving adequate headspace. Remove air bubbles, adjust two-piece caps and seal. Process in boiling-water canner for 20 minutes.
