Here's an excerpt from her daybook entry for August 1.

Cook dessert first. (Barbie recommends Apple Crisp). What's for dinner? If in doubt make a white sauce and start heating water for pasta.

Tonight I added:
1 clove garlic (crushed)
lemon pepper
fresh basil
a handful of diced zuchini
a handful of diced yellow squash
2 handfuls of crumbled smoked salmon

I called it "Smoked Salmon Alfredo Primavera" and served it on Lemon Pepper Linguini, but that was just because I had those ingredients in the refrigerator. You can use whatever you have handy!

Plus, fresh garden salad with lemon tahini dressing, cooked corn and warm apple crisp with vanilla ice cream for dessert.

September Featured Recipe


Pear Muffins

I made these this morning and everyone liked them although I think I'll add cranberries to the batter next time. -KE

1 c. whole wheat flour
1 c. white flour
1/3 c. brown sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. soda
1/4 tsp. ginger
dash allspice
3/4 c. buttermilk
1/2 cup (about 1 medium) pear peeled, cored & grated
1 egg
1/3 c.cooking oil

Preheat oven to 400°F. Mix together dry ingredients. In a separate bowl combine buttermilk, grated pear, egg and cooking oil. Mix with wire whisk or egg beater. Fold dry mixture into liquid mixture just until mixed. Fill greased or paper lined muffin pans 2/3 full. Bake for 20 minutes. Makes 12 muffins. Note: Add about a cup of cranberries to the Pear Muffin batter for a special treat.

WPA Arts Project Harvest Painting by Arnold Blanch

Arnold Blanch, painted this harvest scene in 1937 as part of the WPA Arts Project. The oil on canvas painting depicts people picking apples in an orchard and participating in other farm activities. The painting is displayed in Fredonia, New York's (Chautauqua) Post Office. Click for more information on the New Deal for the Arts.
