Harvest of the 2001 fruit crop begins in late August with Green Bartletts to be the first fruit to come off the trees! Harvest of other varieties will continue well into October. We'll be glad to let you know as each variety of apple and pear becomes available! Meanwhile, our Fruit Availability Chart will give you an idea of the harvest schedule. Herbal Tea Blend
After a hot afternoon riding the dusty range, Cowboy Red heads back to the bunkhouse for a tall, cold glass of Iced Herbal Tea. Our Basic Red Summer Tea recipe is easy to make and satisfies any thirst. You will need the following ingredients: Hibiscus flowers, Lemon grass, Dried apple bits, Rose hips, Citrus peel and your choice of natural flavorings (try a pinch of cinnamon, ginger, lemon verbena, mint, rose geranium, or sweet cicely). Combine ingredients. Prepare as for tea or tisane. Serve over ice.

It's easy to combine your favorite kinds of culinary herbs into delicious tea blends. Use dried fruit bits to add a subtle sweetness to any combination. The peels of dried apples and oranges contribute color as well as flavor to any mix.

Cooking with Herbs—
We've begun to investigate which herbs work well with different apple varieties. So far the results show marjoram and caraway seeds, fines herbes (chives, parsley, tarragon, and chervil), ginger and fresh sage as suitable companion flavors for Granny Smith, Newtown Pippin, Jonathan and other tart apples; thyme and winter savory go well with sweet-tart apples such as Pink Lady and Jonagold; fennel seeds are a flavorful addition when cooking with Fujis.

Grow an Herbal Tea Garden—
If you are thinking of starting an herb garden and want to specialize in growing herbs for teas, we recommend that you include anise hyssop, lemon balm, sage, bergamot and a selection of mint varieties such as peppermint, applemint, pineapple mint, or even chocolate mint in your garden plan! Cookout Zucchini and Green Apples - Skewered

2 medium Zucchinis
1/2 lb. Mushrooms
1 Green Pepper, cut in wedges
2 Granny Smith Apples, cut in wedges
1 small basket Cherry Tomatoes
Butter or Margarine, melted
Hot Barbeque Sauce
Salt and Pepper to taste

Slice zucchini in 1/2" rounds; thread on skewers alternating with mushrooms, green pepper, apples and tomatoes being careful to skewer zucchini slices horizontally to keep them firmly in place. Brush with melted margarine or butter and place on barbeque grill over medium hot coals. Turn occasionally, basting with sauce. Cook for about 15-20 minutes. Serves 4 to 6.
