Benefits of Apples in the News again! Cornell researchers
say that 100 grams of unpeeled fresh apple provide the total
antioxidant activity of 1,500 milligrams of Vitamin C. "Eating
fruits and vegetables is better than taking a vitamin pill,"
said the study's lead author, Dr. Rui Hai Liu, as reported
in the journal, Nature. Apple health benefits from antioxidant
phytonutrients are reported to reduce stroke risk, reduce
lung cancer risk, and protect against heart disease.

Apple-Fig Salad
Wash, core, and slice red apples. Arrange
apple slices and canned figs on bed of salad greens.
Garnish with seedless raisins or chopped dates. Serve
immediately.
English Cinnamon Apple Brunchies
4 English muffins, split in halves
2 apples, peeled, cored and sliced
1/4 c. melted margarine
1/2 c. brown sugar
cinnamon, to taste
Place English muffin halves on cookie
sheet. Put a layer of apple slices on each, brush with
melted margarine, sprinkle with brown sugar and cinnamon.
Bake at 425°F for about 15 minutes. Serve warm.

Here
are a couple of common sense tips on how to have fun
during your outdoor winter expeditions: Stay
hydrated (pack water with you, keep water in your
car). Even in cold weather, the more energy you exert,

to spike. Keep energy levels up with "power snacks"
that combine carbohydrates (like those in fruits and
vegetables) with proteins (like those in cheese and
peanut butter). Sliced apples topped with cheese or

help prevent an energy crash!
